It’s getting cool….
It’s been a while since I’ve sat down to write and play show and tell…but as the weather shows its wrath, I thought it might give me a little time! Although I know how hard the rain has been for some, I love the fact it keeps me indoors and focused on doing other things I love rather than spend all my time on two wheels or a mountain.
So with that, I got a chance to shoot some pics of two of my favorite subjects: (Riley falls into there too, but they weren’t of blog quality) food and Amanda. Please excuse the pie picture…after a full night of cooking, I got lazy and decided my iPhone would do…it did not!

Our CSA is full gear from Kilpatrick Family Farm. Although I liked this picture because it shows the variety of food we got, I think I would have made the depth of view a little larger. I think I get a little spoiled with my f2.0 and think everything is a portrait. Facts aside, I don’t think I have tasted arugula so spicy and tasty.
On a side note (you know how ADD I am), a lot of farms in our area have sustained large damages from the hurricane. Our farmer (Michael!) explained that they have lost thousands from the storm. If you would like to give a little support, click here.

With the rain and the chill in the air, the E and A team decided a hot glass of coffee would be great. You’ll see Amanda’s favorite mug and the food ready to go in the background. For the record: Amanda will not be happy with this picture, but what can you do!

On the docket last night was a rosemary and lemon whole baked chicken, sweet corn from the market, and a new sauteed kale recipe. You’ll see some of the ingredients of the kale above with some Turkish red chili from Mr. Mopsik. Kale is supposed to be one of those super foods, but I find that you have to cook it so much to rid it of its toughness that it looses any kind of nice consistency. I think I prefer chard or spinach…but you always have to try new things I guess. Go here for the rest of the recipe.

Here is the mixed berry pie I made for dessert. If you have ever wondered if you can substitute corn starch for tapioca, (I’m sure you all have) the answer is yes. Both are used as thickener. I liked how in this recipe, the cinnamon goes into the crust and not the filling. I loved how the tastes came together! The pie turned out great and was the perfect end to a perfect evening. The recipe came from a book…so you’ll have to stop by for it (thanks Jan for our farmers market seasons cook book!)!
Okay…even though I said I wouldn’t…here he is begging! Thanks for reading! I would appreciate any feedback below!

Could I get anymore goofy? I kind of want one now!
Spring is here!!
This week the E and A team will attempt to conquer the ground again to supplement our diets with yummy veggies and spices; this time using the back yard as well as our front space. On a whim, we found ourselves at the Home Depot to find some onions. According to Aunt Michele, you can start these before the end of the frost.
Sorry about the crappy picture, but we didn’t catch the light before deciding to write a little. Here is the garlic!
While at The Depot, Amanda had to keep Eric focused. Hewas jumping all over grabbing different seed packs. Peppers, lettuce, cilantro, basil and whatever else he could get. Amanda explained that we need to focus at one thing at a time. First, we decided on some leafy greens. We used the back of the seed packet to become experts on the subject. It looked like kale, mescaline, and chard may be able to be planted before the frost ends, so why not give it a try!
O yeah, and the onions! The plan will be to plant some deep and close for green onions and some shallow and far a part for real onions. Both crops will not have access to good sun. We will see how that works out!
More pics and updates to follow. Hopefully, we’ll have the red onions and greens in this week as well. As long as the garden doesn’t get in the way of our cycling training! Tour de Cure here we come!
